  • Why A Bricked Oven?

    There are many important advantages to cooking in a brick oven:
    1. It can be heated by gas or wood, allowing for versitile applications including smoking, grilling, baking and roasting.
    2. Since the heat is absorbed and radiated by the oven wall, the heat is more evenly distributed and can be retained for several days.
    3. Unlike your coventional oven, a brick oven can be heated to 1000F, which allows for cooking somethings like pizza in under 2 minutes.
    4. Clean up is a breeze, as the fire removes any spills.

  • Who is Four Grand Mere?

    Four Grand Mere is a French wood-fired oven manufacturing company based in the Voge Mountains, near Nancy, France. Established in 1979, their team of artisans built wood-fired ovens with hand-laid, true refractory brick, using only the highest quality natural materials. After working in the food and beverage industry for over 15 years, Antoine Cantarel, was so impressed with Four Grand Mere ovens that he decided to import and distribute a "true" wood fired brick oven to food industry professionals, and home gourmets from coast to coast in North America.

  • What is heat-up time?

    Heat-up time is the time it takes for your oven to get to the desired temperature using wood or gas.
  • What should I know about heat-up time?

    • Air Temperature:

      Most of the oven manufacturers measure the heat-up time by placing a thermometer inside the cooking chamber. This will give you the temperature of the air inside the cooking chamber, just like the gas/electric oven in your kitchen. It is a poor way of measuring the temperature. In a brick oven the fire and the heat absorb by the masonry materials, ie; brick or concrete, which is then returned to the food. With such technique, let the fire die down or open the door and all the heat is gone. The thermometer may show 600 F but open the door and it will drop to 120 F. For some oven companies on the market, they list 20 or 30 minutes for the heat-up time. Though that sounds great, ask them how many pizza's can be cooked after that short of a fire. They will tell you one pizza. After that you will have to continue heating the oven before you can cook more pizza's or anything else.

    • Core Temperature:

      On our ovens we place a thermometer with a 16" long prob that measure the temperature 2" into the thickness of the bricked dome. This is called core temperature or stable temperature. If the thermometer shows 600 F, you can open the door, let the fire die down or even remove the fire all together and the oven will remain at 600 F for hours on. This is why it is a superior way of measuring the temperature, it is accurate and what you need when cooking.
